
Overview
This easy casserole gives you all the flavors of classic pizza — melty cheese, zesty sauce, and pepperoni — but in a lighter, WW-friendly version. Great for family dinners or meal prep.
Ingredients
- 2 cups cooked whole wheat pasta (penne or rotini)
- 1 cup reduced-fat shredded mozzarella cheese
- 1 cup tomato or pizza sauce (no added sugar)
- ½ cup chopped green bell pepper
- ½ cup sliced mushrooms (optional)
- ¼ cup sliced turkey pepperoni (about 16–20 slices)
- ½ tsp Italian seasoning
- ¼ tsp garlic powder
- Salt and pepper to taste
- Nonstick cooking spray
Instructions
- Preheat oven to 375°F (190°C). Lightly coat a baking dish with nonstick spray.
- In a large bowl, mix cooked pasta, sauce, Italian seasoning, garlic powder, and half of the cheese.
- Add vegetables and stir to combine.
- Transfer mixture to the baking dish. Sprinkle the remaining cheese on top.
- Arrange turkey pepperoni slices evenly over the top.
- Bake for 20–25 minutes, until cheese is melted and bubbly.
- Let it cool slightly before serving.
