🧾 Ingredients

For the Meatballs

  • 1 lb (450 g) ground beef (or half beef, half pork)
  • 1 cup fresh spinach, finely chopped
  • ½ cup almond flour
  • 1 egg
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp onion powder
  • ¼ cup grated parmesan cheese

For the Filling

  • 4 oz mozzarella cheese, cut into small cubes

Optional Sauce

  • 1 cup sugar-free marinara sauce
  • 1 tbsp olive oil

  1. Prepare the mixture
    In a bowl combine:
    • ground beef
    • chopped spinach
    • almond flour
    • egg
    • garlic
    • parmesan
    • salt, pepper, onion powder
    Mix until well combined.
  2. Stuff the meatballs
    • Take about 2 tbsp of meat mixture and flatten it in your hand.
    • Place a cube of mozzarella in the center.
    • Wrap the meat around the cheese and roll into a ball.
    • Repeat with remaining mixture.
  3. Cook the meatballsOven method
    • Preheat oven to 375°F (190°C).
    • Place meatballs on a parchment-lined baking sheet.
    • Bake 18–22 minutes until cooked through.
    Pan method
    • Heat olive oil in a skillet.
    • Brown meatballs on all sides and cook until done.
  4. Add sauce (optional)
    • Warm marinara sauce in a pan.
    • Add cooked meatballs and simmer 5 minutes.
