  • ½ cup vanilla or caramel protein powder
  • 3 large eggs
  • 2 tbsp honey or pure maple syrup
  • 1 tsp pure vanilla extract
  • 1 tsp cinnamon
  • Pinch of sea salt

🥜 For the pecan topping:

  • ½ cup chopped pecans
  • 2 tbsp honey or maple syrup
  • 1 tbsp extra virgin olive oil or melted coconut oil
  • ½ tsp cinnamon
  • Pinch of sea salt

Instructions

  1. Preheat oven to 350°F (175°C).
Lightly grease an 8×8-inch baking dish with olive oil or spray.

    • Pour mixture evenly over the bread and gently press down to soak.

  3. Make the pecan topping:
    • In a small bowl, mix pecans, honey, olive oil, cinnamon, and a pinch of salt.
    • Sprinkle evenly over the soaked bread mixture.
  4. Bake:

    • Let cool for 10 minutes before serving.
  5. Optional protein glaze (extra indulgent):
    • Mix 2 tbsp Greek yogurt, 1 tbsp protein powder, and 1 tsp honey.
    • Drizzle over warm pudding.
