For the Meatballs
- 1 lb (450 g) ground beef (or half beef, half pork)
- 1 cup fresh spinach, finely chopped
- ½ cup almond flour
- 1 egg
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp onion powder
- ¼ cup grated parmesan cheese
For the Filling
- 4 oz mozzarella cheese, cut into small cubes
Optional Sauce
- 1 cup sugar-free marinara sauce
- 1 tbsp olive oil
👩🍳 Instructions
- Prepare the mixture
In a bowl combine:- ground beef
- chopped spinach
- almond flour
- egg
- garlic
- parmesan
- salt, pepper, onion powder
- Stuff the meatballs
- Take about 2 tbsp of meat mixture and flatten it in your hand.
- Place a cube of mozzarella in the center.
- Wrap the meat around the cheese and roll into a ball.
- Repeat with remaining mixture.

- Preheat oven to 375°F (190°C).
- Place meatballs on a parchment-lined baking sheet.
- Bake 18–22 minutes until cooked through.
- Heat olive oil in a skillet.
- Brown meatballs on all sides and cook until done.

- Warm marinara sauce in a pan.
- Add cooked meatballs and simmer 5 minutes.
