These low-carb “bombs” are cheesy, garlicky, and filled with juicy burger meat—perfect for keto meals or snacks.

Ingredients

For the Filling

  • 1 lb (450 g) ground beef
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 1 tbsp ketchup (sugar-free for strict keto)
  • 1 tbsp mustard
  • ½ cup shredded cheddar cheese

For the Dough

  • 1½ cups shredded mozzarella cheese
  • 2 tbsp cream cheese
  • Âľ cup almond flour
  • 1 egg

Garlic Parmesan Topping

  • 2 tbsp butter, melted
  • 1 clove garlic, minced
  • 3 tbsp grated parmesan cheese
  • ½ tsp dried parsley

Instructions

  1. Cook the beef
    • In a skillet over medium heat, cook ground beef.
    • Add salt, pepper, onion powder, and garlic powder.
    • Stir in ketchup and mustard.
    • Cook until browned, then remove from heat and mix in cheddar cheese.
  2. Make the keto dough
    • In a microwave-safe bowl, combine mozzarella and cream cheese.
    • Microwave for about 60–90 seconds, stirring until melted and smooth.
    • Add almond flour and egg, then mix until a dough forms.
  3. Form the bombs
    • Divide dough into 8 pieces.
    • Flatten each piece into a circle.
    • Add 1–2 tbsp beef mixture in the center.
    • Fold dough around filling and seal into a ball.
  4. Bake
    • Place balls seam-side down on a parchment-lined baking sheet.
    • Bake at 375°F (190°C) for 12–15 minutes until golden.
  5. Garlic Parmesan topping
    • Mix melted butter, garlic, parmesan, and parsley.
    • Brush over the hot bombs right after baking.
