WW Slow Cooker Hamburger Stew

Overview

This slow cooker meal combines lean ground beef, tender vegetables, and savory broth for a rich, filling stew that’s low in points and full of flavor. Great for family dinners or meal prep.


Ingredients

  • 1 lb (450 g) extra-lean ground beef (95% lean or higher)
  • 1 medium onion, chopped
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 2 medium potatoes, diced
  • 1 cup green beans (fresh or frozen)
  • 1 cup corn (optional, for sweetness)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 3 cups low-sodium beef broth
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. In a skillet over medium heat, cook the ground beef and onions until browned. Drain off any fat.
  2. Transfer the beef mixture to your slow cooker.
  3. Add carrots, celery, potatoes, green beans, corn, diced tomatoes, and beef broth.
  4. Stir in garlic powder, Italian seasoning, salt, and pepper.
  5. Cover and cook on low for 6–8 hours or high for 3–4 hours, until vegetables are tender.
  6. Taste and adjust seasoning before serving.
