Ingredients
- 1 lb (450 g) extra-lean ground beef (95% lean or higher)
- 1 medium onion, chopped
- 3 carrots, sliced
- 2 celery stalks, chopped
- 2 medium potatoes, diced
- 1 cup green beans (fresh or frozen)
- 1 cup corn (optional, for sweetness)
- 1 can (14.5 oz) diced tomatoes, undrained
- 3 cups low-sodium beef broth
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- In a skillet over medium heat, cook the ground beef and onions until browned. Drain off any fat.
- Transfer the beef mixture to your slow cooker.
- Add carrots, celery, potatoes, green beans, corn, diced tomatoes, and beef broth.
- Stir in garlic powder, Italian seasoning, salt, and pepper.
- Cover and cook on low for 6–8 hours or high for 3–4 hours, until vegetables are tender.
- Taste and adjust seasoning before serving.
