WW Sausage and Egg Breakfast

Overview

A simple, satisfying breakfast made with lean turkey sausage, fluffy eggs, and fresh vegetables. Perfect for busy mornings or meal prep — all for low WW points.


Ingredients

  • 4 turkey sausage links (or 6 oz lean turkey sausage)
  • 4 large eggs
  • 4 large egg whites
  • ½ cup chopped bell pepper
  • ½ cup chopped onion
  • ½ cup spinach (optional)
  • ¼ cup reduced-fat shredded cheddar cheese
  • Salt and pepper to taste
  • Cooking spray or 1 tsp olive oil

Instructions

  1. Cook the sausage
    • Heat a nonstick skillet over medium heat.
    • Cook turkey sausage until browned and cooked through. Remove and slice.
  2. Sauté vegetables
    • In the same skillet, lightly spray with cooking spray.
    • Add onion and bell pepper; cook 3–4 minutes until softened.
    • Add spinach and cook until wilted.
  3. Add eggs
    • In a bowl, whisk together eggs, egg whites, salt, and pepper.
    • Pour over the veggies and sausage.
    • Stir gently until eggs are cooked through.
  4. Add cheese
    • Sprinkle shredded cheddar on top and let melt before serving.

Serving Ideas

  • Serve with a slice of whole-grain toast or wrap in a tortilla for an on-the-go breakfast wrap.
  • Add salsa or hot sauce for extra flavor.
