Ingredients
- 4 turkey sausage links (or 6 oz lean turkey sausage)
- 4 large eggs
- 4 large egg whites
- ½ cup chopped bell pepper
- ½ cup chopped onion
- ½ cup spinach (optional)
- ¼ cup reduced-fat shredded cheddar cheese
- Salt and pepper to taste
- Cooking spray or 1 tsp olive oil
Instructions
- Cook the sausage
- Heat a nonstick skillet over medium heat.
- Cook turkey sausage until browned and cooked through. Remove and slice.
- Sauté vegetables
- In the same skillet, lightly spray with cooking spray.
- Add onion and bell pepper; cook 3–4 minutes until softened.
- Add spinach and cook until wilted.
- Add eggs
- In a bowl, whisk together eggs, egg whites, salt, and pepper.
- Pour over the veggies and sausage.
- Stir gently until eggs are cooked through.
- Add cheese
- Sprinkle shredded cheddar on top and let melt before serving.
Serving Ideas
- Serve with a slice of whole-grain toast or wrap in a tortilla for an on-the-go breakfast wrap.
- Add salsa or hot sauce for extra flavor.
