  • 1 lb (450 g) lean ground beef (93% lean or higher)
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 medium potatoes, diced
  • 2 stalks celery, sliced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup frozen peas
  • 1 cup green beans (fresh or frozen)
  • 3 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Optional: a dash of smoked paprika or chili flakes for a little heat

👩‍🍳 Instructions

  1. Brown the beef:
    In a skillet over medium heat, cook ground beef and onion until beef is browned. Drain any excess fat. Add garlic and cook for 1 minute more.
  2. Add to slow cooker:
    Transfer beef mixture to your slow cooker. Add carrots, potatoes, celery, diced tomatoes, tomato paste, broth, Worcestershire sauce, and Italian seasoning.
  3. Cook:
    Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until vegetables are tender.
  4. Add vegetables at the end:
    About 30 minutes before serving, stir in peas and green beans. Season with salt and pepper to taste.
  5. Serve:
    Ladle into bowls and enjoy warm — perfect with a side of whole-grain bread or a salad.

  • Swap beef for ground turkey to lower the points.
  • Add a handful of spinach or zucchini for extra fiber.
