Servings: 6
WW Points: ~4–5 points per serving (depending on plan and ingredients)
🧄 Ingredients
- 1 lb (450 g) lean ground beef (93% lean or higher)
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 3 medium carrots, sliced
- 2 medium potatoes, diced
- 2 stalks celery, sliced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup frozen peas
- 1 cup green beans (fresh or frozen)
- 3 cups low-sodium beef broth
- 2 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Optional: a dash of smoked paprika or chili flakes for a little heat
👩🍳 Instructions
- Brown the beef:
In a skillet over medium heat, cook ground beef and onion until beef is browned. Drain any excess fat. Add garlic and cook for 1 minute more. - Add to slow cooker:
Transfer beef mixture to your slow cooker. Add carrots, potatoes, celery, diced tomatoes, tomato paste, broth, Worcestershire sauce, and Italian seasoning. - Cook:
Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until vegetables are tender. - Add vegetables at the end:
About 30 minutes before serving, stir in peas and green beans. Season with salt and pepper to taste. - Serve:
Ladle into bowls and enjoy warm — perfect with a side of whole-grain bread or a salad.
💡 Tips
- Swap beef for ground turkey to lower the points.
- Add a handful of spinach or zucchini for extra fiber.
- Leftovers freeze well for up to 3 months.
