1 lb Hamburger

1 small onion, chopped

1 can Rotel Tomatoes w/ chilies

4 oz Cream Cheese

1 1/2 cup Chicken Broth or stock, your preference

1 tsp Garlic Powder

1 packet Taco Seasoning

– Brown hamburger & onion, drain

– Melt Cream Cheese, then add tomatoes, broth/stock, garlic powder and taco seasoning and mix together

– Simmer for 30 minutes

– To serve, I topped with cheddar cheese and sour cream and Enjoy!

  • 1 lb ground beef (or ground turkey if you prefer)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes (with green chilies if you like spice)
  • 1 can (8 oz) tomato sauce
  • 1 packet taco seasoning
  • 1 packet ranch dressing mix (optional, but adds creaminess and tang)
  • 2 cups beef broth (or chicken broth)
  • Salt and pepper to taste

🔥 Instructions

  1. Brown the meat:
    In a large pot or Dutch oven, cook the ground beef and onion over medium heat until browned. Drain any excess grease.
  2. Add garlic:
    Stir in minced garlic and cook for 1 minute until fragrant.
  3. Mix everything:
    Add beans, corn, diced tomatoes, tomato sauce, taco seasoning, ranch mix, and broth. Stir well to combine.
  4. Simmer:
    Bring to a boil, then reduce heat and simmer uncovered for 30–40 minutes, stirring occasionally. The longer it cooks, the more flavorful it gets.
  5. Serve:
    Ladle into bowls and top with your favorite taco toppings.

  • Shredded cheddar or Monterey Jack cheese
  • Sour cream or Greek yogurt
  • Sliced jalapeños
  • Diced avocado
  • Crushed tortilla chips
  • Chopped cilantro

🍳 Slow Cooker Option

Brown the beef and onion first, then add everything to a slow cooker.
Cook on low for 6–8 hours or high for 3–4 hours.
