Ingredients (Makes 12 Muffins)

Wet Ingredients:

  • ½ cup extra virgin olive oil
  • ½ cup honey or pure maple syrup
  • 2 large eggs
  • 1 cup pumpkin purée (not pumpkin pie filling)
  • ½ cup Greek yogurt (plain, unsweetened)
  • 1 tsp pure vanilla extract

Dry Ingredients:

  • 1¾ cups whole wheat flour (or spelt flour)
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • 1½ tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp ginger
  • ¼ tsp sea salt

Optional Add-ins:

  • ¼ cup chopped walnuts or pecans
  • ¼ cup dark chocolate chips or raisins
  • 2 tbsp pumpkin seeds (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix wet ingredients:
    In a large bowl, whisk together olive oil, honey, eggs, pumpkin purée, Greek yogurt, and vanilla until smooth.
  3. Mix dry ingredients:
    In a separate bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  4. Combine:
    Add dry ingredients to wet ingredients and mix gently until just combined (don’t overmix).
  5. Add optional ingredients:
    Fold in nuts, raisins, or chocolate chips if desired.
  6. Bake:
    Spoon batter evenly into the muffin cups. Top with pumpkin seeds.
    Bake for 20–22 minutes, or until a toothpick comes out clean.
  7. Cool & enjoy:
    Let cool slightly before serving. These muffins stay moist and flavorful for days!
