Ingredients:
800–900g ripe tomatoes (sliced or cubed)
50ml extra virgin olive oil
25ml red wine vinegar
30ml water
1 tsp salt
3 tsp sugar (balances the acidity)
1 bell pepper (red or yellow, finely chopped)
½ tbsp sweet paprika ️
5 garlic cloves (minced)
Fresh dill & parsley (a generous handful, chopped)
Instructions:
Prep the Tomatoes – Wash and slice (or cube) them to your preferred size.
Make the Dressing – In a bowl, whisk together olive oil, vinegar, water, salt, sugar, paprika, and minced garlic.
Add Crunch & Color – Stir in the chopped bell pepper.
Combine & Toss – Pour the dressing over the tomatoes and gently mix to coat evenly.
Finish with Fresh Herbs – Sprinkle with dill and parsley for a fragrant touch.
Chill & Serve – Let it rest in the fridge for at least 30 minutes to let the flavors meld.
