Keto Texas Toast

  • 4 slices of keto bread (or make your own using almond flour)
  • 2 tbsp butter, softened
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated parmesan
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  1. Preheat oven to 400°F (200°C).
  2. Mix butter, mozzarella, parmesan, and garlic powder.
  3. Spread on keto bread slices.
  4. Bake for 5-7 minutes or until golden brown.

Sloppy Joe Filling

  • 1 lb ground beef (80/20 or 70/30)
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (8 oz) sugar-free tomato sauce
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 1/4 cup beef broth
  • 1/4 cup shredded cheddar (optional)
  1. Brown ground beef in a skillet.
  2. Add onion, bell pepper, and garlic; cook until tender.
  3. Stir in tomato sauce, paste, smoked paprika, cumin, salt, and pepper.
  4. Simmer for 10-15 minutes, adding beef broth as needed.
  5. Top with cheddar (if using).

Assembly

  1. Place Sloppy Joe filling on keto Texas Toast.
  2. Top with another slice of toast (optional).

Nutrition (per serving, without cheese):

  • Texas Toast: ~200 calories, 4g protein, 16g fat, 4g carbs
  • Sloppy Joe Filling: ~350 calories, 24g protein, 24g fat, 6g carbs
