Ingredients (6–8 servings)

  • 1 lb ground beef (or turkey/pork)
  • 1 tbsp olive oil or butter
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups cabbage, chopped (about ½ medium head)
  • 1 bell pepper, diced (optional but low-carb)
  • 1 can (14 oz) diced tomatoes, undrained
  • 6 cups beef broth
  • 1 tbsp tomato paste (adds richness; still low-carb)
  • 1 tsp paprika
  • 1 tsp dried oregano
  • ½ tsp thyme
  • ½–1 tsp chili flakes (optional)
  • Salt & black pepper, to taste
  • Optional add-ins:
    • 1–2 cups cauliflower florets or riced cauliflower
    • ½ lb sliced mushrooms
    • Worcestershire (½ tsp) for depth

Instructions

  1. Brown the beef
    Heat oil in a large pot over medium-high heat. Add ground beef, season with salt/pepper, and cook until browned. Drain excess grease if needed.
  2. Sauté aromatics
    Add onion and cook 3–4 minutes. Add garlic and cook 30 seconds until fragrant.
  3. Add vegetables
    Stir in cabbage, bell pepper, and any optional veggies. Cook 5 minutes to soften.
  4. Add liquids & seasonings
    Pour in beef broth, diced tomatoes, tomato paste, paprika, oregano, thyme, and chili flakes.
  5. Simmer
    Bring to a boil, reduce heat, and simmer 20–25 minutes until cabbage is tender and flavors meld.
  6. Taste & adjust
    Add more salt, pepper, or chili flakes as needed.
