- 1 bell pepper, diced (optional but low-carb)
- 1 can (14 oz) diced tomatoes, undrained
- 6 cups beef broth
- 1 tbsp tomato paste (adds richness; still low-carb)
- 1 tsp paprika
- 1 tsp dried oregano
- ½ tsp thyme
- ½–1 tsp chili flakes (optional)
- Salt & black pepper, to taste
- Optional add-ins:
- 1–2 cups cauliflower florets or riced cauliflower
- ½ lb sliced mushrooms
- Worcestershire (½ tsp) for depth
Instructions
- Brown the beef
Heat oil in a large pot over medium-high heat. Add ground beef, season with salt/pepper, and cook until browned. Drain excess grease if needed. - Sauté aromatics
Add onion and cook 3–4 minutes. Add garlic and cook 30 seconds until fragrant. - Add vegetables
Stir in cabbage, bell pepper, and any optional veggies. Cook 5 minutes to soften. - Add liquids & seasonings
Pour in beef broth, diced tomatoes, tomato paste, paprika, oregano, thyme, and chili flakes. - Simmer
