All the classic Reuben sandwich flavors—corned beef, sauerkraut, Swiss cheese, and dressing—wrapped in a crispy low-carb shell. Perfect for keto lunches or appetizers.
🧾 Ingredients
- 8 slices corned beef
- 8 slices Swiss cheese
- ½ cup sauerkraut (well drained)
- ¼ cup sugar-free Thousand Island dressing (or keto Russian dressing)
- 1 egg
- ½ cup almond flour
- ¼ cup grated parmesan cheese
- ½ tsp garlic powder
- ½ tsp paprika
- Oil or cooking spray for frying/baking

- Prepare the filling
- Lay a slice of corned beef flat.
- Place a slice of Swiss cheese on top.
- Add 1 tablespoon sauerkraut and a small drizzle of dressing.
- Roll them up
- Roll tightly into a log shape.
- Secure with a toothpick if needed.
- Prepare coating
- Beat the egg in a bowl.
- In another bowl mix almond flour, parmesan, garlic powder, and paprika.
- Coat the roll-ups
- Dip each roll in the egg, then coat with the almond flour mixture.

- Bake at 400°F (200°C) for 12–15 minutes
