All the classic Reuben sandwich flavors—corned beef, sauerkraut, Swiss cheese, and dressing—wrapped in a crispy low-carb shell. Perfect for keto lunches or appetizers.


🧾 Ingredients

  • 8 slices corned beef
  • 8 slices Swiss cheese
  • ½ cup sauerkraut (well drained)
  • ¼ cup sugar-free Thousand Island dressing (or keto Russian dressing)
  • 1 egg
  • ½ cup almond flour
  • ¼ cup grated parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Oil or cooking spray for frying/baking

👩‍🍳 Instructions

  1. Prepare the filling
    • Lay a slice of corned beef flat.
    • Place a slice of Swiss cheese on top.
    • Add 1 tablespoon sauerkraut and a small drizzle of dressing.
  2. Roll them up
    • Roll tightly into a log shape.
    • Secure with a toothpick if needed.
  3. Prepare coating
    • Beat the egg in a bowl.
    • In another bowl mix almond flour, parmesan, garlic powder, and paprika.
  4. Coat the roll-ups
    • Dip each roll in the egg, then coat with the almond flour mixture.

    • 375°F (190°C) for 8–10 minutes
    Oven
    • Bake at 400°F (200°C) for 12–15 minutes
    Pan Fry
    • Fry in a little oil 2–3 minutes per side until golden.
  6. Serve
    • Serve hot with extra keto Thousand Island dressing for dipping.
