- 1 cup full-fat cottage cheese (4% works best)
- 1 large egg
- Β½ cup shredded mozzarella
- ΒΌ cup grated Parmesan
- 2 tbsp almond flour
- Β½ tsp baking powder
- Β½ tsp Italian seasoning
- ΒΌ tsp garlic powder
- Salt & pepper to taste
Toppings
- Sugar-free pizza sauce or marinara (very light use)
- Mini pepperoni or chopped pepperoni
- Extra mozzarella
- Olives, mushrooms, or bell peppers (small amounts)

- Prep
- Preheat oven to 375Β°F (190Β°C)
- Grease a mini muffin tin or line with silicone cups
- Blend the Base
- Blend cottage cheese until smooth (important for texture)
- Add egg and blend again
- Mix
- Pour into bowl
- Stir in mozzarella, Parmesan, almond flour, baking powder, and seasonings
- Fill
- Spoon mixture into muffin cups (ΒΎ full)
- Bake (Round 1)
- Bake 12β15 minutes until set and lightly golden
- Add Toppings
- Add Β½β1 tsp pizza sauce, toppings, and more cheese
- Bake Again
- Return to oven 5β7 minutes until bubbly
- Cool
- Rest 5 minutes before removing (they firm up!)
