High-Protein, Low-Carb Bread Pudding (Short Recipe)
Ingredients
4 slices low-carb, high-protein bread
1 cup unsweetened almond milk
2 eggs + 1 scoop vanilla protein powder
1 tbsp butter (optional)
1–2 tbsp low-carb sweetener
1 tsp vanilla + ½ tsp cinnamon
Instructions
Preheat oven to 350°F (175°C).
Cube bread and place in a small baking dish.
Whisk almond milk, eggs, protein powder, sweetener, vanilla, and cinnamon.
Pour over bread; press gently to soak.
Bake 25–30 min until set and lightly golden.
Cool slightly; serve with berries or a no-sugar syrup.
