Ground Beef & Vegetable Skillet

Ingredients:

For the main dish:

1 lb (450 g) ground beef (lean or regular)

1 tablespoon olive oil (if using lean beef)

1 medium onion, diced

2 garlic cloves, minced

2 medium carrots, peeled and diced

1 zucchini, diced

1 red bell pepper, chopped

1 cup green beans, chopped (fresh or frozen)

1 cup corn kernels (fresh, canned, or frozen)

1 cup canned diced tomatoes (with juice)

1 tablespoon tomato paste

1 teaspoon paprika

1/2 teaspoon dried thyme

Salt and pepper, to taste

1/4 cup water or beef broth (optional, if mixture seems too dry)

Fresh parsley, chopped (for garnish)

Directions:

Brown the beef: In a large skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it up with a wooden spoon. Drain excess fat if necessary. If using lean beef, heat 1 tablespoon of olive oil before adding the beef.

Add aromatics: Add diced onion and garlic to the skillet with the beef
