🥘 Chicken Spinach & Mushroom Low-Carb Oven Dish
Ingredients
- 2 lbs (900 g) boneless, skinless chicken thighs or breasts
- 2 tbsp olive oil or butter
- 8 oz (225 g) mushrooms, sliced
- 3 cloves garlic, minced
- 3 cups fresh spinach
- 1 cup heavy cream
- ½ cup chicken broth
- ¾ cup shredded mozzarella or Swiss cheese
- ¼ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt & black pepper to taste
- Optional: red pepper flakes
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Season chicken with salt, pepper, paprika, and Italian seasoning.
- Sear chicken 3–4 minutes per side until lightly golden (it will finish cooking in the oven).
- Remove chicken and set aside. In the same skillet, sauté mushrooms until browned.
- Add garlic and cook for 30 seconds. Stir in spinach until just wilted.
- Pour in chicken broth and cream; simmer 3–4 minutes until slightly thickened.
- Transfer chicken to a baking dish. Pour mushroom-spinach sauce over the top.
- Sprinkle mozzarella and Parmesan evenly.
- Bake uncovered for 25–30 minutes until chicken is cooked through and bubbly.
- Optional: Broil 2–3 minutes for a golden cheese topping.
