This soup was NOT easy to make, but I finally got my chicken tortilla soup to look and taste like theirs. So proud of myself.

-Two chicken breast (boiled and hand shredded)
-One can of Cannellini beans and one can of Great Northern beans (blended and seasoned well)
– two cans of rotel ( spice level of your choice)
-one can of creamed corn
– one can of Mexican style corn
-cumin, salt, garlic powder, and onion powder, black pepper.
– one white onion and 3 cloves of garlic, sautéed in canola oil
-juice of one lime
Add your canned ingredients into your Dutch oven, DO NOT STRAIN THEM. Add your blended beans, chicken, and lime juice. Season to taste and let it simmer for about an hour.
To avoid being gassy, add about 0.5 tsp of baking soda.

Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red or green bell pepper, diced
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp smoked paprika (optional)
- 1 can (14 oz) diced tomatoes
- 4 cups chicken broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 2 cups cooked shredded chicken (rotisserie works great!)
- Salt and pepper, to taste
- Juice of 1 lime
- 2 tbsp fresh cilantro, chopped
For Serving
- Tortilla strips or chips
- Avocado, diced
- Shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- Sour cream or Greek yogurt
- Extra cilantro and lime wedges
Instructions
- Heat oil in a large pot over medium heat.
- Add onion, garlic, and bell pepper; sauté 4–5 minutes until softened.
- Stir in chili powder, cumin, and paprika; cook 30 seconds until fragrant.
- Add diced tomatoes, chicken broth, black beans, corn, and chicken.
- Simmer 20–25 minutes to let flavors blend.
- Stir in lime juice and cilantro; adjust seasoning to taste.
- Serve hot with tortilla strips and your favorite toppings.
