Ingredients

  • 3 cups nonfat plain Greek yogurt
  • 3 eggs
  • 1 (1 oz) box instant sugar-free banana cream pudding mix (dry)
  • 1 large banana, mashed
  • 1 teaspoon vanilla extract
  • Optional crust: use a very light base (e.g. crushed low-fat graham crackers + a little light butter or substitute)
  • Optional topping: banana slices, sugar-free whipped topping

Directions

  1. Preheat oven to 350 °F (ā‰ˆ 175 °C).
  2. In a bowl, whisk eggs + mashed banana + vanilla until blended.
  3. Stir in Greek yogurt and the dry pudding mix until smooth.
  4. If using a crust, press the crust mix into the bottom of a greased 9-inch springform or pie pan.
  5. Pour the filling over crust (or directly into the pan if crustless).
  6. Bake ~30 minutes (cheesecake should be slightly set, center may jiggle).
  7. Turn off oven, crack the door open, let it cool inside for ~1 hour to prevent cracking.
  8. Chill in refrigerator several hours or overnight before serving.
  9. Top with banana slices or light whipped topping just before serving.
