š Banana Cream Cheesecake (WW-Style)

Ingredients
- 3 cups nonfat plain Greek yogurt
- 3 eggs
- 1 (1 oz) box instant sugar-free banana cream pudding mix (dry)
- 1 large banana, mashed
- 1 teaspoon vanilla extract
- Optional crust: use a very light base (e.g. crushed low-fat graham crackers + a little light butter or substitute)
- Optional topping: banana slices, sugar-free whipped topping
Directions
- Preheat oven to 350 °F (ā 175 °C).
- In a bowl, whisk eggs + mashed banana + vanilla until blended.
- Stir in Greek yogurt and the dry pudding mix until smooth.
- If using a crust, press the crust mix into the bottom of a greased 9-inch springform or pie pan.
- Pour the filling over crust (or directly into the pan if crustless).
- Bake ~30 minutes (cheesecake should be slightly set, center may jiggle).
- Turn off oven, crack the door open, let it cool inside for ~1 hour to prevent cracking.
- Chill in refrigerator several hours or overnight before serving.
- Top with banana slices or light whipped topping just before serving.
