2 cups grated sweet potato 🍠 (2 pts per serving)
1 cup grated zucchini, squeezed dry 🥒 (0 pts)
2 eggs, beaten 🥚 (0 pts)
¼ cup all-purpose flour or almond flour (1–2 pts per serving)
→ Almond flour is gluten-free and slightly lower in carbs
¼ cup grated Parmesan cheese 🧀 (1–2 pts per serving)
2 green onions, chopped 🧅 (0 pts)
2 garlic cloves, minced 🧄 (0 pts)
½ tsp smoked paprika 🌶️

👩🍳 Directions
Prepare the Mixture 🥣
In a large bowl, mix together grated sweet potato, zucchini, eggs, flour, Parmesan, green onions, garlic, smoked paprika, salt, and pepper until evenly combined.
Form the Fritters 👋
Scoop about 2 tablespoons of the mixture and form into small patties (flatten slightly for even cooking).
Cook the Fritters 🍳
Heat a nonstick skillet over medium heat with 1 tsp oil or spray. Cook fritters in batches, about 3–4 minutes per side, until golden and crisp. Add more oil or spray as needed between batches.
Drain & Serve 🧺
Transfer to a paper towel–lined plate to remove any excess oil. Garnish with extra green onions and serve warm. Optional: Serve with 0-point Greek yogurt mixed with lemon juice or a light dipping sauce.
