🛒 Ingredients
250g (9 oz) lean ground beef (93% lean or higher) 🥩 (5–6 pts per serving)
1 tsp olive oil 🫒 (1 pt) – or use cooking spray to reduce points
1 medium sweet potato, diced 🍠 (2 pts per serving)
1 medium zucchini, sliced into half-moons 🥒 (0 pts)
½ small onion, diced 🧅 (0 pts)
1 garlic clove, minced 🧄 (0 pts)
½ tsp paprika 🌶️
½ tsp cumin 🌿
Salt & black pepper, to taste 🧂
Optional: chopped parsley for garnish 🌿
👩‍🍳 Directions
Cook the Sweet Potatoes 🍠
In a large nonstick skillet over medium heat, add olive oil (or spray) and diced sweet potatoes. Cook for 7–10 minutes, stirring occasionally, until beginning to soften. Remove and set aside.
Sauté the Beef & Aromatics 🥩
In the same skillet, add the lean ground beef. Cook until browned, breaking up with a spoon. Add diced onion and garlic; cook for 2–3 more minutes. Season with paprika, cumin, salt, and pepper.
Add Zucchini & Combine 🥒
Stir in the zucchini and partially cooked sweet potatoes. Cook everything together for 7–8 more minutes, until the vegetables are tender and the flavors meld.
Serve & Garnish 🌿
Spoon into bowls and top with fresh parsley if desired. Enjoy warm as-is or serve over a bed of greens or cauliflower rice for 0 extra points!
