Spicy Asian Chicken Marinade for Air Fryer

Ingredients:

1/4 cup soy sauce
1 tablespoon sunflower oil
2 cloves garlic, finely chopped
4 tablespoons lemon juice
1 tablespoon sambal or hot sauce (adjust to taste)
1-inch piece of ginger, finely chopped
1 teaspoon coriander powder
2 tablespoons brown sugar
4 boneless, skinless chicken thigh fillets
Instructions:

Prepare Marinade: In a mixing bowl, combine soy sauce, sunflower oil, finely chopped garlic, lemon juice, sambal or hot sauce, finely chopped ginger, coriander powder, and brown sugar. Mix until the sugar is completely dissolved.
Marinate Chicken: Cut the chicken thigh fillets into bite-sized pieces and place them in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 2 hours, or preferably overnight for maximum flavor.
Preheat Air Fryer: Preheat your air fryer to 200°C (400°F) for a few minutes to ensure it’s nice and hot before cooking the chicken.
Cook Chicken in Air Fryer: Once marinated, remove the chicken from the marinade and shake off any excess. Place the chicken pieces in the basket of the air fryer in a single layer, making sure they’re not overcrowded. Depending on the size of your air fryer, you may need to cook the chicken in batches.
Air Fry Chicken: Cook the chicken in the preheated air fryer for approximately 9 minutes, shaking the basket once halfway through to ensure even cooking. The chicken should be golden brown and cooked through with an internal temperature of 75°C (165°F).
Serve and Enjoy: Once cooked, remove the chicken from the air fryer and let it rest for a minute before serving. Garnish with chopped fresh coriander or spring onions if desired, and serve hot with your favorite sides such as rice, salad, or vegetables.
