Ingredients

  • 2 tbsp olive oil
  • 4 cloves garlic, minced (or smashed whole if you prefer smoother sauce)
  • 1 can (28 oz) San Marzano whole peeled tomatoes
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp sugar (optional — helps balance acidity)
  • 1 tsp dried oregano OR Italian seasoning
  • A handful fresh basil leaves (or 1 tsp dried basil)
  • Optional: pinch crushed red pepper flakes for heat
  • Optional: 1 tbsp butter (for extra richness)

Instructions

  1. Heat olive oil in a saucepan over medium heat.
  2. Add the garlic and sauté for about 1 minute until fragrant (don’t brown it).
  3. Add the San Marzano tomatoes and crush them with a spoon or potato masher.
  4. Season with salt, pepper, oregano, and sugar (if using).
  5. Bring to a gentle simmer and cook 20–30 minutes, stirring occasionally.
  6. Stir in fresh basil at the end.
