Ingredients (Serves 4)
Chicken
- 4 bone-in, skin-on chicken thighs (or breasts)
- Salt & black pepper, to taste
Vegetables
- 1½ lb baby potatoes, halved
- 12 oz green beans, trimmed
Garlic Herb Oil
- ¼ cup olive oil
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp Italian seasoning
- ½ tsp paprika
- Juice of ½ lemon (optional)
Instructions
- Preheat oven to 200°C / 400°F. Lightly grease a large baking sheet or pan.
- In a small bowl, mix olive oil, garlic, herbs, paprika, and lemon juice.
- Toss potatoes with half of the garlic herb oil, salt, and pepper. Spread on pan.
- Place chicken on the pan; rub with remaining oil mixture and season well.
- Bake 25 minutes.
- Remove pan, add green beans, toss lightly with pan juices, season with salt & pepper.
- Return to oven and bake 15–20 minutes more until chicken is golden and cooked through (165°F / 74°C).
