Ingredients (Serves 4)

Chicken

  • 4 bone-in, skin-on chicken thighs (or breasts)
  • Salt & black pepper, to taste

Vegetables

  • 1½ lb baby potatoes, halved
  • 12 oz green beans, trimmed

Garlic Herb Oil

  • ¼ cup olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Juice of ½ lemon (optional)

Instructions

  1. Preheat oven to 200°C / 400°F. Lightly grease a large baking sheet or pan.
  2. In a small bowl, mix olive oil, garlic, herbs, paprika, and lemon juice.
  3. Toss potatoes with half of the garlic herb oil, salt, and pepper. Spread on pan.
  4. Place chicken on the pan; rub with remaining oil mixture and season well.
  5. Bake 25 minutes.
  6. Remove pan, add green beans, toss lightly with pan juices, season with salt & pepper.
  7. Return to oven and bake 15–20 minutes more until chicken is golden and cooked through (165°F / 74°C).
  8. Optional: Broil 2–3 minutes for extra-crispy skin.

  • Use baby potatoes for faster cooking
  • Pat chicken dry before seasoning for crispier skin
  • Swap green beans with asparagus or broccoli if preferred
