Lemon Blueberry Loaf (Mediterranean Diet Recipe)
Ingredients
Wet Ingredients:
- ⅓ cup extra virgin olive oil
- ⅓ cup honey or pure maple syrup
- 2 large eggs
- ½ cup Greek yogurt (plain, unsweetened)
- Juice and zest of 1 large lemon
- 1 tsp vanilla extract
Dry Ingredients:
- 1½ cups whole wheat flour or spelt flour
- 1½ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp sea salt
Add-ins:
- 1 cup fresh or frozen blueberries (tossed lightly in flour to prevent sinking)
Optional Glaze (Mediterranean-style):
- 2 tbsp Greek yogurt
- 1 tbsp honey
- 1 tsp lemon juice
Instructions
- Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it with olive oil.
- Whisk wet ingredients:
In a large bowl, combine olive oil, honey, eggs, yogurt, lemon juice, lemon zest, and vanilla. Whisk until smooth. - Mix dry ingredients:
In another bowl, whisk together flour, baking powder, baking soda, and salt. - Combine:
Add dry mixture to wet ingredients and stir until just combined (don’t overmix). Gently fold in blueberries. - Bake:
Pour into the prepared pan. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean. - Cool & glaze:
Let the loaf cool for 10 minutes, then drizzle with the optional yogurt-honey-lemon glaze.
