Ingredients

Wet Ingredients:

  • ⅓ cup extra virgin olive oil
  • ⅓ cup honey or pure maple syrup
  • 2 large eggs
  • ½ cup Greek yogurt (plain, unsweetened)
  • Juice and zest of 1 large lemon
  • 1 tsp vanilla extract

Dry Ingredients:

  • 1½ cups whole wheat flour or spelt flour
  • 1½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp sea salt

Add-ins:

  • 1 cup fresh or frozen blueberries (tossed lightly in flour to prevent sinking)

Optional Glaze (Mediterranean-style):

  • 2 tbsp Greek yogurt
  • 1 tbsp honey
  • 1 tsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it with olive oil.
  2. Whisk wet ingredients:
    In a large bowl, combine olive oil, honey, eggs, yogurt, lemon juice, lemon zest, and vanilla. Whisk until smooth.
  3. Mix dry ingredients:
    In another bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Combine:
    Add dry mixture to wet ingredients and stir until just combined (don’t overmix). Gently fold in blueberries.
  5. Bake:
    Pour into the prepared pan. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool & glaze:
    Let the loaf cool for 10 minutes, then drizzle with the optional yogurt-honey-lemon glaze.
