🍓 Keto Strawberry Cheesecake “Wonton” Bites

Ingredients

Keto Wonton Wrappers

  • 1½ cups shredded mozzarella (low-moisture)
  • 2 oz cream cheese
  • ¾ cup almond flour
  • 1 tsp garlic powder (omit for sweet version)
  • 1 egg yolk

Cheesecake Filling

  • 8 oz cream cheese, softened
  • ¼ cup powdered erythritol or monk fruit
  • ½ tsp vanilla extract

Strawberry Topping

  • ½ cup fresh strawberries, finely diced
  • 1 tbsp powdered sweetener
  • 1 tsp lemon juice

For Frying or Baking

  • Avocado oil (for frying)
    or
  • Butter or avocado oil spray (for baking)

Instructions

1. Make the Keto Wonton Dough

  1. Melt mozzarella and cream cheese together (microwave 45–60 sec).
  2. Stir in almond flour and egg yolk until a dough forms.
  3. Knead between parchment until smooth.
  4. Roll thin and cut into 3-inch squares.

2. Prepare Filling

  1. Mix cream cheese, sweetener, and vanilla until smooth.
  2. In a separate bowl, mix strawberries, sweetener, and lemon juice.

3. Assemble

  1. Place 1 tsp cheesecake filling in center of each square.
  2. Add ½ tsp strawberries on top.
  3. Fold like a wonton and pinch edges closed.

4. Cook

Air Fryer (Best)

  • 350°F (175°C) for 6–8 minutes, flipping once.

Oven

  • 375°F (190°C) for 10–12 minutes, until golden.

Pan Fry

  • Fry in shallow oil 1–2 min per side until crisp.

Optional Keto Sugar Dust

  • 2 tbsp powdered erythritol
  • ¼ tsp cinnamon

Dust lightly before serving.
