For the Casserole
- 1 lb (450g) fresh green beans, trimmed (or frozen, thawed)
- 6 slices bacon, chopped
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced (optional but recommended)
- 1 cup heavy cream
- 1/2 cup chicken broth (low carb)
- 3 oz cream cheese (softened)
- 1 cup shredded cheddar
- 1/2 cup shredded mozzarella
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/2 tsp paprika
- 1/4 tsp nutmeg (classic casserole flavor)
- 1 tbsp butter (if needed)

1. Cook the Green Beans
- Bring a pot of salted water to boil.
- Add green beans and cook 5–6 minutes until bright green and tender-crisp.
- Drain and set aside.
(If using frozen, just thaw and pat dry.)
2. Cook the Bacon
- In a large skillet, cook chopped bacon until crispy.
- Remove bacon and set aside, leaving the bacon fat in the pan.
3. Make the Creamy Sauce
In the same skillet:
