🔸 Caramel Layer

  • ½ cup heavy cream
  • ¼ cup butter
  • ⅓ cup powdered erythritol or monk-fruit sweetener
  • ½ tsp vanilla extract
  • Pinch of salt

🔸 Nut Layer

  • ¾ cup mixed nuts (almonds, pecans, walnuts), chopped
    (avoid cashews for strict keto)

🔸 Chocolate Layer

  • ¾ cup sugar-free dark chocolate chips (85–90%)
  • 1 tbsp coconut oil or butter

👩‍🍳 Instructions

1️⃣ Make the caramel

  • In a saucepan over medium-low heat, add butter, cream, and sweetener.
  • Simmer gently for 10–12 minutes, stirring often, until thick.
  • Remove from heat, stir in vanilla and salt.

2️⃣ Add nuts

  • Mix chopped nuts into the caramel.
  • Spread evenly into a lined loaf pan or silicone mold.
  • Chill for 20 minutes.

3️⃣ Chocolate topping

  • Melt chocolate chips with coconut oil using a double boiler or microwave.
  • Pour over the caramel-nut layer.
