π Keto Cherry Cheesecake Fluff
Ingredients
- 8 oz cream cheese, softened
- 1 cup heavy whipping cream, cold
- β cup powdered erythritol or monk fruit sweetener (adjust to taste)
- 1 tsp vanilla extract
- Β½ cup sugar-free cherry pie filling or
- Β½ cup chopped fresh or frozen cherries + 1 tbsp powdered sweetener + 1 tsp lemon juice
- Optional: 1β2 tbsp sugar-free cherry gelatin powder (for stronger cherry flavor)
Instructions
- Beat cream cheese until smooth and fluffy.
- Add sweetener and vanilla; mix well.
- In a separate bowl, whip heavy cream to stiff peaks.
- Gently fold whipped cream into cream cheese mixture.
- Fold in cherry filling (and gelatin powder if using).
- Chill 30β60 minutes before serving.
