Ingredients
- 2 cups cooked chicken, finely chopped or shredded
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 large eggs
- ¼ cup all-purpose flour (or almond flour for low-carb)
- 2 tbsp mayonnaise or Greek yogurt
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 2–3 tbsp olive oil (for frying)
Instructions
Mix the Batter
- In a large bowl combine:
- Chicken
- Mozzarella
- Parmesan
- Eggs
- Flour
- Mayo or yogurt
- Garlic
- Parsley
- Salt, pepper, paprika
- Mix until well combined. The mixture should be thick and scoopable.
Shape
- Scoop about 2 tablespoons per fritter.
- Lightly flatten into small patties.
Cook
- Heat olive oil in a skillet over medium heat.
- Cook fritters 3–4 minutes per side until golden brown and crispy.
- Cook in batches to avoid overcrowding.
Drain & Serve
- Transfer to paper towel-lined plate.
- Serve warm with sour cream, Greek yogurt dip, or garlic sauce.
- Add lemon wedges for brightness.
Optional Baking Method
- Preheat oven to 400°F (200°C)
- Place fritters on lined baking sheet
- Bake 15–18 minutes, flipping halfway
