🍄 Creamy Spinach & Mushroom Lasagna
Ingredients
For the filling:
- 2 tbsp olive oil or butter
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 12 oz (340 g) mushrooms, sliced (white or cremini)
- 4 cups fresh spinach, roughly chopped
- Salt and pepper, to taste
- ½ tsp dried thyme or Italian seasoning
For the creamy sauce:
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 3 cups milk (whole or 2%)
- ½ cup grated Parmesan cheese
- ½ cup ricotta or cream cheese (for extra creaminess)
- Pinch of nutmeg (optional)
For layering:
- 9–12 lasagna noodles (regular or no-boil)
- 2 cups shredded mozzarella cheese
- ½ cup Parmesan, for topping
Instructions
- Cook the mushrooms and spinach
- In a large skillet, heat olive oil over medium heat.
- Add onion and sauté 3–4 minutes until soft.
- Add mushrooms; cook until golden and most liquid has evaporated (about 7–8 minutes).
- Stir in garlic, spinach, salt, pepper, and thyme. Cook until spinach wilts.
- Set aside.
- Make the creamy sauce
- In a saucepan, melt butter over medium heat.
- Whisk in flour and cook for 1 minute.
- Gradually add milk, whisking until smooth and thickened (5–7 minutes).
- Stir in Parmesan, ricotta, salt, pepper, and nutmeg.
- Remove from heat.
- Assemble the lasagna
- Preheat oven to 375°F (190°C).
- Spread a thin layer of sauce on the bottom of a 9×13-inch baking dish.
- Add a layer of noodles, followed by half of the mushroom-spinach mix, a layer of sauce, and a sprinkle of mozzarella.
- Repeat layers until ingredients are used up, finishing with sauce and mozzarella + Parmesan on top.
- Bake
- Cover with foil (sprayed with nonstick spray to prevent sticking).
- Bake 25 minutes, then uncover and bake 15–20 minutes more until golden and bubbly.
- Let rest 10–15 minutes before slicing.
