Here’s a Creamy Spinach & Mushroom Lasagna that’s rich, cheesy, and packed with layers of earthy mushrooms, tender spinach, and velvety sauce.

Ingredients

For the filling:

  • 2 tbsp olive oil or butter
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 12 oz (340 g) mushrooms, sliced (white or cremini)
  • 4 cups fresh spinach, roughly chopped
  • Salt and pepper, to taste
  • ½ tsp dried thyme or Italian seasoning

For the creamy sauce:

  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 3 cups milk (whole or 2%)
  • ½ cup grated Parmesan cheese
  • ½ cup ricotta or cream cheese (for extra creaminess)
  • Pinch of nutmeg (optional)

For layering:

  • 9–12 lasagna noodles (regular or no-boil)
  • 2 cups shredded mozzarella cheese
  • ½ cup Parmesan, for topping

Instructions

  1. Cook the mushrooms and spinach
    • In a large skillet, heat olive oil over medium heat.
    • Add onion and sauté 3–4 minutes until soft.
    • Add mushrooms; cook until golden and most liquid has evaporated (about 7–8 minutes).
    • Stir in garlic, spinach, salt, pepper, and thyme. Cook until spinach wilts.
    • Set aside.
  2. Make the creamy sauce
    • In a saucepan, melt butter over medium heat.
    • Whisk in flour and cook for 1 minute.
    • Gradually add milk, whisking until smooth and thickened (5–7 minutes).
    • Stir in Parmesan, ricotta, salt, pepper, and nutmeg.
    • Remove from heat.
  3. Assemble the lasagna
    • Preheat oven to 375°F (190°C).
    • Spread a thin layer of sauce on the bottom of a 9×13-inch baking dish.
    • Add a layer of noodles, followed by half of the mushroom-spinach mix, a layer of sauce, and a sprinkle of mozzarella.
    • Repeat layers until ingredients are used up, finishing with sauce and mozzarella + Parmesan on top.
  4. Bake
    • Cover with foil (sprayed with nonstick spray to prevent sticking).
    • Bake 25 minutes, then uncover and bake 15–20 minutes more until golden and bubbly.
    • Let rest 10–15 minutes before slicing.

  • Use alfredo sauce instead of homemade if you want to save time.
  • Add a layer of ricotta + egg mixture for a more classic lasagna texture.
