Ingredients

  • 8 oz (225 g) spaghetti (or any pasta you love)
  • 2 tbsp olive oil or butter
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 8 oz (225 g) mushrooms, sliced (white, cremini, or mixed)
  • 2 cups fresh spinach, roughly chopped
  • 1 cup heavy cream (or half-and-half for lighter version)
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Optional: pinch of chili flakes or nutmeg
  • Optional garnish: extra Parmesan and fresh parsley

Instructions

  1. Cook the spaghetti
    • Bring a large pot of salted water to a boil.
    • Cook spaghetti according to package directions until al dente.
    • Reserve ½ cup pasta water, then drain.
  2. Sauté the veggies
    • In a large skillet, heat olive oil or butter over medium heat.
    • Add onion and sautĂ© 3–4 minutes until soft.
    • Add mushrooms and cook 6–8 minutes until golden and moisture evaporates.
    • Stir in garlic; cook 30 seconds until fragrant.
  3. Add spinach and sauce
    • Add spinach, cook until wilted (about 1–2 minutes).
    • Pour in cream and stir in Parmesan.
    • Season with salt, pepper, and optional nutmeg/chili flakes.
    • Simmer 2–3 minutes until slightly thickened.
  4. Toss with pasta
    • Add the cooked spaghetti to the skillet.
    • Toss well, adding a splash of reserved pasta water until the sauce coats the noodles smoothly.
  5. Serve hot
    • Garnish with extra Parmesan and parsley.
