🌮🧀 Cheesy Keto Taco Soup

Ingredients (Serves 6)

Protein & Veggies

  • 1 lb (450g) ground beef (or turkey)
  • 1 small onion, diced
  • 2 cloves garlic, minced

Liquids & Base

  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 can (10 oz) Rotel tomatoes with green chiles (or diced tomatoes + 1 jalapeño)

Cheesy Goodness

  • 4 oz cream cheese, softened
  • 1 ½ cups shredded cheddar cheese
  • ½ cup shredded Monterey Jack (optional)

Seasonings (Taco Flavor)

  • 2 tsp chili powder
  • 1 ½ tsp paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Optional: ¼ tsp cayenne pepper for heat

👩‍🍳 Instructions

1. Brown the Meat

  • In a large pot, cook ground beef over medium heat until browned.
  • Add onion and garlic; cook 2–3 minutes until soft.
  • Drain extra grease.

2. Add Rotel & Seasonings

Add to the pot:
✔ Rotel tomatoes
✔ chili powder
✔ paprika
✔ cumin
✔ oregano
✔ garlic powder
✔ onion powder
✔ salt & pepper

Stir and cook 1 minute to bloom the spices.


3. Add Broth, Cream & Cream Cheese

  • Pour in beef broth and heavy cream.
  • Add cream cheese in small cubes.
  • Stir continuously until the cream cheese melts smoothly.

4. Add the Cheeses

  • Reduce heat to low.
  • Stir in cheddar and Monterey Jack.
  • Let it simmer 10–12 minutes until thick, creamy, and rich.

5. Taste & Adjust

Add more salt, pepper, or spice if needed.
