Blueberry cheesecake parfaits
These Three Ingredient blueberry cheesecake parfaits are the easiest treat! three ingredients and so yummy! And if you follow weight watchers each is just two points!
Ingredients
- Great Value Plain nonfat yogurt
- 16 oz

- Jell-O Vanilla sugar free fat free instant pudding & pie filling
- 1 oz

- frozen blueberries
Instructions
- I take Half the big container of plain nonfat yogurt and mix it with the whole jello pudding cheesecake mix box. I divide the mixture into two jars and top with the frozen blueberries or any other fruit you would like.

📝 Ingredients:
- For the Cheesecake Layer:
- 8 oz reduced-fat cream cheese (1/3 less fat, 1/2 block) – 8 SP
- 1/2 cup nonfat Greek yogurt (0 SP)
- 2 tbsp powdered sugar or a zero-calorie sweetener like Stevia or Monkfruit (0 SP)
- 1 tsp vanilla extract (0 SP)
- 1 tbsp fresh lemon juice (0 SP)
- For the Blueberry Topping:
- 1 cup fresh blueberries (0 SP)
- 1 tbsp sweetener (optional, if you want extra sweetness) (0 SP)
- 1/2 tsp lemon zest (optional)
- For the Crust Layer:
- 1/4 cup crushed graham crackers (2 full crackers, 2-3 SP)
- 1 tbsp light butter or coconut oil (2 SP)
- 1 tbsp brown sugar (1 SP)
🍴 Instructions:
- Make the Cheesecake Layer:
- In a medium bowl, beat together the cream cheese, Greek yogurt, sweetener, and vanilla extract until smooth and creamy.
- Stir in the lemon juice for a tangy cheesecake flavor. Taste and adjust sweetness if needed.
- Make the Blueberry Topping:
- In a small saucepan, cook the blueberries over medium heat for 2-3 minutes, just until they start to break down and release juices.
- If you like it sweeter, stir in your choice of sweetener. Optionally, add a little lemon zest for extra zing.
- Remove from heat and let cool.
- Prepare the Crust Layer:
- In a small bowl, melt the butter in the microwave (about 20-30 seconds).
- Add the crushed graham crackers and brown sugar, and stir until the crumbs are coated and slightly moistened.
- Assemble the Parfaits:
- Layer the parfaits in small glasses or jars. Start with a spoonful of the graham cracker crust at the bottom.
- Add a layer of the cheesecake mixture.
- Top with the blueberry compote.
- Repeat the layers as needed, finishing with the blueberry topping.
- Chill & Serve:
- Refrigerate the parfaits for at least 30 minutes to let the flavors meld together.
- Top with a few extra fresh blueberries before serving.
🍽️ Serving Suggestions:
- If you’re watching your points closely, you can use lighter graham cracker options or skip the crust altogether and just make a cheesecake mousse layered with blueberries.
- Tip: If you’re not a fan of warm blueberries, you can skip the stovetop step and just layer fresh blueberries.
This parfait can also be made in advance for meal prep—just keep the crust separate until you’re ready to serve for the perfect crunch!
