Rich Fruit Bread / Fruit Cake – Full Recipe
Ingredients
Main Ingredients
- 6–7 bread slices (edges removed, cut into pieces)
- 1 cup milk
- 2 eggs
- ½ cup sugar (white or brown)
- ½ cup butter (melted)
- 1 teaspoon vanilla extract
Dry Fruits
- ½ cup raisins
- ¼ cup tutti-frutti
- ¼ cup chopped dates
- ¼ cup chopped almonds or walnuts

- 1 teaspoon baking powder
- ½ teaspoon cinnamon powder
- ¼ teaspoon nutmeg powder (optional)

- 2 tablespoons brown sugar
- 1 tablespoon butter

Step-by-Step Method
1. Prepare the Bread
Remove the crusts from the bread slices.
Tear the bread into small pieces and place them in a large bowl.
Pour the milk over the bread and let it soak for 10 minutes.
The bread should become soft and mushy.
2. Make the Wet Mixture
In another bowl combine:
- Eggs
- Sugar
- Melted butter
- Vanilla extract
Whisk everything together until the mixture becomes smooth and creamy.
3. Mix the Bread and Wet Ingredients
Mash the soaked bread using a fork or hand mixer until it forms a thick paste.
Add the egg mixture to the bread.
Mix well until you get a thick batter.
4. Add Dry Ingredients
Add the following:
- Baking powder
- Cinnamon powder
- Nutmeg powder
- Salt
Mix gently until everything is combined.
5. Add the Dry Fruits
Now add:
- Raisins
- Tutti-frutti
- Chopped dates
- Almonds or walnuts
Stir well so the fruits are evenly distributed throughout the batter.
The batter will now look thick and full of fruit pieces.
6. Prepare the Baking Pan
Grease a cake pan with butter or oil.
Lightly dust it with flour to prevent sticking.
Pour the batter into the pan.
Sprinkle extra raisins and nuts on top.
7. Bake the Cake
Preheat the oven to 180°C (350°F).
Bake for 40–45 minutes.
Check with a toothpick:
- If it comes out clean → cake is ready
- If it is wet → bake for another 5–10 minutes
The top should become golden brown.
8. Cooling
Remove the cake from the oven and let it cool for 15–20 minutes.
Then remove it from the pan and cut into slices.

This cake will be:
- Crispy and golden on the outside
- Soft and moist on the inside
- Full of sweet fruity flavor from raisins and dried fruits
It becomes a dense fruit loaf, very similar to the one in the image.

- Add 1 tablespoon honey for extra richness.
- Soak the dry fruits in orange juice or milk for 15 minutes for a better taste.
- Adding ½ mashed banana will make the cake even softer and moister.
