Creamed Chipped Beef on Toast (WW Lightened-Up)

Ingredients
- 4 oz dried chipped beef (Armour-style), rinsed well & chopped
- 1 tbsp light butter or margarine
- 1 tbsp olive oil or light butter spread
- 2 tbsp all-purpose flour
- 1½ cups fat-free milk
- ½ tsp black pepper
- Pinch paprika or nutmeg (optional, traditional flavor)
- 4 slices light whole wheat bread or WW-friendly toast
Instructions
- Rinse the beef
Rinse chipped beef under warm water to remove excess salt. Pat dry and chop. - Make the roux
In a nonstick skillet over medium heat, melt butter and oil. Whisk in flour and cook 1 minute until lightly golden. - Create the sauce
Slowly whisk in fat-free milk. Cook, stirring constantly, until thickened (about 3–4 minutes). - Add beef & season
Stir in chipped beef, pepper, and paprika/nutmeg if using. Simmer 2–3 minutes until heated through. - Serve
Spoon over toasted bread and serve hot.
