Here’s a lighter Weight Watchers–friendly version of Creamed Chipped Beef on Toast that keeps the classic comfort-food flavor while cutting back on fat and points.


Creamed Chipped Beef on Toast (WW Lightened-Up)

Serves: 4

  • Blue / Purple: ~4–5 points per serving
  • Green: ~6–7 points per serving

Ingredients

  • 4 oz dried chipped beef (Armour-style), rinsed well & chopped
  • 1 tbsp light butter or margarine
  • 1 tbsp olive oil or light butter spread
  • 2 tbsp all-purpose flour
  • 1½ cups fat-free milk
  • ½ tsp black pepper
  • Pinch paprika or nutmeg (optional, traditional flavor)
  • 4 slices light whole wheat bread or WW-friendly toast

Instructions

  1. Rinse the beef
    Rinse chipped beef under warm water to remove excess salt. Pat dry and chop.
  2. Make the roux
    In a nonstick skillet over medium heat, melt butter and oil. Whisk in flour and cook 1 minute until lightly golden.
  3. Create the sauce
    Slowly whisk in fat-free milk. Cook, stirring constantly, until thickened (about 3–4 minutes).
  4. Add beef & season
    Stir in chipped beef, pepper, and paprika/nutmeg if using. Simmer 2–3 minutes until heated through.
  5. Serve
    Spoon over toasted bread and serve hot.
