Ingredients:

  • 8 oz fat-free cream cheese, softened
  • 1 cup plain nonfat Greek yogurt
  • 1 package sugar-free cheesecake pudding mix (1 oz box)
  • 2 tbsp unsweetened almond milk (or skim milk)
  • 2 tbsp granulated sweetener of choice (like Stevia or monk fruit)
  • ½ tsp vanilla extract
  • Optional: crushed graham crackers or light whipped topping (adds points)

Instructions:

  1. In a large bowl, beat the cream cheese until smooth.
  2. Add in the Greek yogurt, pudding mix, sweetener, vanilla, and milk.
  3. Whip until thick, fluffy, and creamy.
  4. Spoon mixture into mini muffin liners or small dessert cups.
  5. Chill in the fridge for at least 1–2 hours to set.
  6. (Optional) Top with a dab of light whipped cream and a few berries before serving.
