Ingredients

For the Casserole

  • 1 lb (450g) fresh green beans, trimmed (or frozen, thawed)
  • 6 slices bacon, chopped
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced (optional but recommended)
  • 1 cup heavy cream
  • 1/2 cup chicken broth (low carb)
  • 3 oz cream cheese (softened)
  • 1 cup shredded cheddar
  • 1/2 cup shredded mozzarella
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1/4 tsp nutmeg (classic casserole flavor)
  • 1 tbsp butter (if needed)

👩‍🍳 Instructions

1. Cook the Green Beans

  • Bring a pot of salted water to boil.
  • Add green beans and cook 5–6 minutes until bright green and tender-crisp.
  • Drain and set aside.

(If using frozen, just thaw and pat dry.)


2. Cook the Bacon

  • In a large skillet, cook chopped bacon until crispy.
  • Remove bacon and set aside, leaving the bacon fat in the pan.

3. Make the Creamy Sauce

In the same skillet:

  1. Add onion and sauté until soft (2–3 min).
  2. Add garlic and mushrooms; cook another 2–3 minutes.
  3. Pour in heavy cream + chicken broth.
  4. Add cream cheese and stir until melted and smooth.
  5. Season with salt, pepper, paprika, and nutmeg.
  6. Let it simmer on low for 3–4 minutes until thickened.

4. Assemble the Casserole

  • Preheat oven to 375°F (190°C).
  • In a baking dish, combine:
    ✔ cooked green beans
    ✔ creamy sauce
    ✔ half of the bacon
    ✔ half of the cheddar
  • Mix gently.
  • Top with remaining cheddar, mozzarella, and bacon.

5. Bake

  • Bake uncovered for 18–22 minutes, until bubbly and golden on top.
