⭐ Ingredients (Makes 4–6 burritos)

  • 3 medium russet potatoes, peeled & diced
  • 2 tbsp butter
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika (or regular paprika)
  • Salt & pepper to taste
  • 1 cup shredded cheddar cheese (or Mexican blend)
  • ½ cup sour cream (or cream cheese for extra richness)
  • 1 small onion, finely diced
  • 1 tbsp oil
  • 4–6 large flour tortillas
  • Optional extras:
    • Cooked bacon bits
    • Green onions
    • Jalapeños
    • Hot sauce
    • Refried beans
    • Salsa

🔥 Instructions

1. Cook the potatoes

  • Boil diced potatoes in salted water until fork tender (about 10–12 minutes).
  • Drain and return to the pot.

2. Mash them

  • Add butter, garlic powder, onion powder, paprika, salt, pepper, and sour cream.
  • Mash until creamy but still a little textured.
  • Stir in 1 cup shredded cheese.

3. Cook the onions

  • In a skillet, heat 1 tbsp oil, sauté onions until golden and soft.
  • Mix into the cheesy mashed potatoes.

4. Assemble the burritos

  • Warm tortillas.
  • Add a generous scoop of cheesy potato filling.
  • Add any extras (bacon, jalapeño, beans, etc.).
  • Roll tightly.

5. Toast

  • Place burritos seam-side down in a dry skillet.
  • Toast until golden and crispy on both sides.
