Ingredients

  • 2 large eggs
  • 2 tsp pure vanilla extract
  • ½ cup hot brewed coffee (enhances chocolate flavor)

For the Frosting:

  • ¼ cup extra virgin olive oil
  • ¼ cup unsweetened cocoa powder
  • 3 tbsp honey or maple syrup
  • 2 tbsp Greek yogurt
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • Optional: ¼ cup chopped walnuts or dark chocolate shavings

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking pan (or line with parchment).
  2. Mix dry ingredients:
    In a large bowl, whisk together flour, cocoa powder, baking soda, salt, and sugar.
  3. Mix wet ingredients:
    In another bowl, combine yogurt, olive oil, almond milk, eggs, and vanilla. Whisk until smooth.
  4. Combine & add coffee:
    Pour wet ingredients into the dry and stir until just mixed. Slowly stir in the hot coffee (batter will be thin).
  5. Bake:
    Pour batter into the pan and bake for 22–25 minutes, or until a toothpick inserted in the center comes out clean.
  6. Make the frosting:
    In a small saucepan over low heat, whisk olive oil, cocoa powder, and honey until smooth. Remove from heat and stir in yogurt, vanilla, and salt.
  7. Frost the cake:
    Spread frosting over the warm cake and sprinkle with chopped walnuts or dark chocolate shavings. Let cool before slicing.
