Ingredients

  • 1 cup fresh or frozen blueberries

  • 1 tsp lemon juice
  • 1 tsp cornstarch or arrowroot powder mixed with 1 tbsp water

Instructions

1. Make the crust:

  • Mix crushed biscuits (or almond flour) with olive oil and honey until crumbly.
  • Press evenly into the bottom of a 7–8 inch springform pan or small dish.
  • Chill in the fridge while you prepare the filling.

2. Prepare the filling:

  • In a bowl, beat cream cheese until smooth.
  • Add Greek yogurt, protein powder, honey, vanilla, and lemon juice.
  • Mix until creamy and well combined.
  • Spread over the chilled crust and smooth the top.
  • Refrigerate for 4–6 hours (or overnight) until set.

3. Make the blueberry sauce:

  • In a small saucepan, combine blueberries, honey, and lemon juice.
  • Heat over medium until blueberries start to release juice.
