🍪 Mediterranean Peanut Butter Buckeye Cookies
Ingredients
For the cookie dough:
- 1 cup natural peanut butter (no added sugar or hydrogenated oils)
- 1/3 cup pure honey or date syrup
- 1 large egg
- 1 tsp pure vanilla extract
- 1 ½ cups almond flour
- 2 tbsp extra virgin olive oil (adds richness, Mediterranean-style)
- 1/2 tsp baking soda
- Pinch of sea salt
For the chocolate coating:
- 1/2 cup dark chocolate (70% cocoa or higher)
- 1 tbsp coconut oil or olive oil
Optional filling layer (for a “gooey” center like the photo):
- 3 tbsp tahini or natural peanut butter mixed with 1 tbsp honey
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix peanut butter, honey, egg, and vanilla until smooth.
- Add almond flour, baking soda, salt, and olive oil. Mix until a soft dough forms.
- Scoop small balls of dough (about 1 tablespoon each) and flatten slightly on the baking sheet.
- Bake for 8–10 minutes, or until edges are golden. Cool completely.
- Melt chocolate and coconut oil together until smooth.
- If using a filling: spread a bit of tahini-honey mix between two cookies or press a small amount in the center before drizzling chocolate.
- Dip or drizzle each cookie with melted dark chocolate.
- Chill until the chocolate sets.
