Vegan Kung Pao Tofu — Bold, Spicy & Totally Addictive! 🌶️✨

If you love that sweet-spicy, sticky-saucy flavor from your favorite takeout spot, this Vegan Kung Pao Tofu is about to become your go-to weeknight dinner! 🍚

It’s loaded with crispy tofu cubes, colorful veggies, roasted peanuts, and a rich, glossy sauce that hits every note — savory, tangy, slightly sweet, and spicy. The best part? It’s super easy to make — even my 10-year-old can whip this up perfectly! 🙌


🌿 Ingredients

For the tofu:

  • 14 oz (400 g) firm tofu, pressed & cubed
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp sesame oil or neutral oil

For the stir-fry:

  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • green onions, sliced
  • ½ cup roasted peanuts (unsalted)
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated

For the sauce:

  • 3 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp rice vinegar
  • 1 tbsp maple syrup or agave
  • 1 tbsp hoisin sauce
  • 1 tsp chili paste or sriracha (adjust to heat preference)
  • 1 tsp cornstarch + 2 tbsp water (for thickening)

👩‍🍳 Instructions

1️⃣ Crisp the tofu:
Toss tofu cubes with soy sauce and cornstarch until coated. Pan-fry or air-fry until golden and crispy on all sides. Set aside.

2️⃣ Sauté the aromatics:
In a wok or large pan, heat oil and add garlic and ginger. Sauté until fragrant. Add bell peppers and green onions, and stir-fry for 3–4 minutes.

3️⃣ Mix the sauce:
In a small bowl, whisk together soy sauce, rice vinegar, maple syrup, hoisin sauce, chili paste, and cornstarch slurry.

4️⃣ Combine & coat:
Add the crispy tofu and sauce to the pan. Stir continuously until everything is coated and the sauce thickens beautifully.

5️⃣ Serve & garnish:
Sprinkle roasted peanuts and a bit of chopped cilantro or green onions on top. Serve hot with jasmine rice or noodles. 🍚


💡 Tips

🔥 Adjust spice level by adding more or less chili paste.
🥦 Want extra veggies? Add broccoli, zucchini, or carrots.
🍳 For air-fryer tofu, cook at 400°F (200°C) for 15 minutes, shaking halfway.
