- 1 green bell pepper, chopped
- 4 green onions, sliced
- ½ cup roasted peanuts (unsalted)
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
For the sauce:
- 3 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp rice vinegar
- 1 tbsp maple syrup or agave
- 1 tbsp hoisin sauce
- 1 tsp chili paste or sriracha (adjust to heat preference)
- 1 tsp cornstarch + 2 tbsp water (for thickening)
