🍕 Keto Pepperoni Pizza Quesadillas

Ingredients (2 quesadillas)

  • 2 low-carb tortillas (Mission Zero Carb, Egglife, or almond-flour tortillas)
  • ½ cup shredded mozzarella cheese
  • 2–3 tbsp sugar-free pizza sauce
    (Rao’s, Yo Mama’s, or homemade)
  • 10–12 slices pepperoni
  • 1 tbsp butter or olive oil for frying
  • 1 tbsp parmesan (optional but amazing)
  • Optional add-ins:
    • A sprinkle of Italian seasoning
    • Crushed red pepper
    • Sliced olives
    • Fresh basil
    • Garlic powder

Instructions

1. Heat the pan

Melt butter in a nonstick skillet over medium heat.

2. Build the quesadilla

On one tortilla:

  • Spread a thin layer of pizza sauce
  • Add mozzarella cheese
  • Add pepperoni slices
  • Sprinkle Italian seasoning if desired
    Top with the second tortilla.

3. Cook

Place in the skillet and cook:

  • 2–3 minutes per side, until golden, crisp, and cheese is melted.
