✨ Keto Magic Cookies (Soft, Chewy, 1 Bowl)
Ingredients (12 cookies)
- 1 cup unsweetened shredded coconut
- ½ cup almond flour
- ⅓ cup sugar-free chocolate chips
- ¼ cup chopped pecans or walnuts
- ¼ cup melted butter
(or coconut oil) - ¼ cup keto sweetener
(allulose = soft/chewy, erythritol = firmer) - 1 large egg
- 1 tsp vanilla extract
- Pinch of salt
Optional add-ins:
- A few butterscotch chips (sugar free)
- 2 tbsp unsweetened coconut flakes on top
- Sugar-free caramel drizzle
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment.
- In a bowl, combine:
coconut, almond flour, chocolate chips, and nuts. - Add:
melted butter, sweetener, egg, vanilla, salt.
Stir until fully combined and sticky. - Scoop heaping tablespoons of dough onto the baking sheet.
Flatten slightly (they won’t spread much). - Bake 10–12 minutes or until edges turn golden brown.
