KETO INSTANT POT BEEF STROGANOFF
Ingredients (6 servings)
Beef:
- 1.5 lbs beef stew meat or sliced sirloin
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- 1 tbsp olive oil or butter
Vegetables & Aromatics:
- 1 small onion, diced
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
Sauce:
- 1 cup beef broth
- 1 tbsp Worcestershire sauce (check sugar-free)
- 1 tsp Dijon mustard
- 3 oz cream cheese, softened
- ½ cup sour cream
- ½ tsp xanthan gum optional for thickening
To Finish:
- Fresh parsley
Instructions
1. Sauté the Beef
- Turn Instant Pot to Sauté.
- Add olive oil/butter.
- Season beef with salt, pepper, and paprika.
- Brown the meat in batches (don’t overcrowd).
- Remove and set aside.
2. Sauté Onion, Garlic & Mushrooms
- Add onion and cook until softened.
- Add garlic and mushrooms; cook 3–4 min.
- Scrape up browned bits for flavor.
3. Build the Sauce
- Add beef back to the pot.
- Pour in beef broth, Worcestershire, and Dijon.
- Stir well.
- Seal the Instant Pot.
4. Pressure Cook
- Cook on High Pressure for 12 minutes.
- Natural release 5 minutes, then quick release.
5. Finish the Creamy Sauce
- Turn on Sauté (Low).
- Add cream cheese and melt fully.
- Stir in sour cream.
- If thicker sauce is desired, sprinkle ⅛ tsp xanthan gum and whisk until thickened (optional).
