Here’s a creamy, rich, and ultra-easy Keto Instant Pot Beef Stroganoff—tender beef, mushrooms, and a silky low-carb sauce. Ready fast and perfect over cauliflower rice or zucchini noodles!


KETO INSTANT POT BEEF STROGANOFF

Ingredients (6 servings)

Beef:

  • 1.5 lbs beef stew meat or sliced sirloin
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tbsp olive oil or butter

Vegetables & Aromatics:

  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced

Sauce:

  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce (check sugar-free)
  • 1 tsp Dijon mustard
  • 3 oz cream cheese, softened
  • ½ cup sour cream
  • ½ tsp xanthan gum optional for thickening

To Finish:

  • Fresh parsley

Instructions

1. Sauté the Beef

  1. Turn Instant Pot to Sauté.
  2. Add olive oil/butter.
  3. Season beef with salt, pepper, and paprika.
  4. Brown the meat in batches (don’t overcrowd).
  5. Remove and set aside.

2. Sauté Onion, Garlic & Mushrooms

  1. Add onion and cook until softened.
  2. Add garlic and mushrooms; cook 3–4 min.
  3. Scrape up browned bits for flavor.

3. Build the Sauce

  1. Add beef back to the pot.
  2. Pour in beef broth, Worcestershire, and Dijon.
  3. Stir well.
  4. Seal the Instant Pot.

4. Pressure Cook

  • Cook on High Pressure for 12 minutes.
  • Natural release 5 minutes, then quick release.

5. Finish the Creamy Sauce

  1. Turn on Sauté (Low).
  2. Add cream cheese and melt fully.
  3. Stir in sour cream.
  4. If thicker sauce is desired, sprinkle ⅛ tsp xanthan gum and whisk until thickened (optional).

Serve With

  • Cauliflower rice
  • Zoodles
  • Shirataki noodles
  • Mashed cauliflower
