Ingredients (makes 6 mini meatloaves)

  • 1 lb ground chicken
  • 1 egg
  • 1/2 cup grated parmesan cheese
  • 1/3 cup almond flour
  • 2–3 cloves garlic, minced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional)
  • 1/3 cup shredded mozzarella (optional for extra moisture)

Topping (optional but AMAZING)

  • 2 tbsp melted butter
  • 2 tbsp grated parmesan
  • 1/2 tsp garlic powder
  • 1 tsp parsley

👩‍🍳 Instructions

1. Preheat

Heat oven to 375°F (190°C). Grease a muffin tin or mini loaf pan.


2. Mix the meatloaf

In a bowl, combine:

  • ground chicken
  • egg
  • parmesan
  • almond flour
  • garlic + garlic powder
  • onion powder
  • Italian seasoning
  • salt + pepper
  • parsley
  • (mozzarella if using)

Mix gently—don’t overwork or the meatloaf becomes dense.


3. Shape & Bake

  • Divide into 6 mini meatloaves or fill 6 muffin cups.
  • Bake 20–25 minutes, until internal temp hits 165°F (74°C).
