KETO CAULIFLOWER BREAD
Ingredients (1 loaf or 8 slices)
- 3 cups raw cauliflower rice (fresh or frozen, squeezed dry)
- 3 large eggs
- 1 cup shredded mozzarella
- ½ cup grated Parmesan
- 1 tsp baking powder
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
Optional: 1 tbsp melted butter or olive oil for richer flavor
INSTRUCTIONS
1. Prep the Cauliflower
Very important: remove moisture so the bread isn’t soggy.
- Microwave cauliflower rice 5 minutes or steam until soft.
- Let cool slightly.
- Place in a clean towel or cheesecloth and squeeze out ALL excess water (you should remove 1–1.5 cups of liquid).
2. Mix the Batter
In a bowl, combine:
- Eggs
- Mozzarella
- Parmesan
- Baking powder
- Garlic & onion powder
- Salt & pepper
- Add the squeezed-dry cauliflower.
Mix until a thick dough forms.
3. Shape & Bake
- Preheat oven to 375°F (190°C).
- Line a baking dish or loaf pan with parchment.
- Spread the mixture evenly and smooth the top.
- Bake 28–30 minutes until set and golden on top.
- Let cool 10 minutes before slicing.
FOR EXTRA CRISPY EDGES
After baking:
- Slice, brush lightly with butter, and air fry or pan-toast for 2–3 minutes.
