Here’s a simple, fluffy, no-fail Keto Pancake recipe — SO soft, cooks evenly, and tastes like real pancakes without the carbs!


🥞 Fluffy Keto Pancakes

Ingredients (6–8 small pancakes)

  • 2 large eggs
  • 2 oz cream cheese, softened
  • ½ cup almond flour
  • 1 tbsp coconut flour (optional but makes them fluffier)
  • 1 tsp baking powder
  • 1–2 tbsp keto sweetener (allulose or monk fruit)
  • ½ tsp vanilla extract
  • 1–2 tbsp heavy cream (or almond milk)
  • Butter for cooking

Instructions

1. Blend or whisk batter

Mix together:

  • Eggs
  • Cream cheese
  • Almond flour
  • Coconut flour
  • Baking powder
  • Sweetener
  • Vanilla
  • Heavy cream

Blend until smooth OR whisk well by hand.
Let batter rest 5 minutes to thicken.

2. Cook

Heat a nonstick pan over medium-low.
Add a little butter.

Pour small pancakes (keto batter cooks better small).
Cook 2–3 minutes until edges set and bubbles appear.
Flip and cook 1–2 minutes more.

3. Serve

Top with:

  • Sugar-free syrup
  • Berries
  • Whipped cream
  • Butter
